Lemon Leek Orchids and Spanish Mackerel Dinner : My Actifit Report Card: November 13 2021


Late night - body not keen on moving. Turn over and hope it goes away - the week has had too many late nights. Did drag myself up. My wife wanted to head to Aldi to check out an air fryer. We have a small one and use it a lot especially when we travel. Always good to be able to cook in a hotel room. I was not keen to go but we went. Shops were busy like the week before Christmas though Aldi was quiet.

We did stop on the way home so I could show my wife an orchid - a short way down the track was the offer. 400 meters was closer to 700.

My wife saw this flash of yellow deeper off the track - that makes the orchid of the day as I did not see it last time - just the 5 plants near the track. Too windy for close ups

Found a few more - this one was easier to photograph with the blackened tree behind

Short walk and a few new plants is a win.

Back home - spent a lot of steps doing garden work. Prepared a new bed for summer flowers and for sunflowers. Wondering if we can get enough seed to feed the king parrots.

Dinner was an invention test. My wife bought Spanish mackerel with some ideas from a fellow shopper - sear and then bake in a tomato and herb sauce.

What to add? - potato dauphinoise

Make a roux (gf flour); add milk and parmesan and ricotta cheese and simmer into a nice sauce. Trick on potatoes - mandolin thin and boil for one minute. Bake for 30 minutes at 180C

Then the fish - sear each side and set aside

Sauce is a simple tomato base - onions, celery, garlic, white wine to deglaze, chorizo passata, tomato paste, fresh herbs - rosemary, thyme, oregano, parsley.

Add fish and cook another 5 to 8 minutes - test it is cooked through. Serve with a nice salad. Yum layering of herbs
