Cabbage & Actifit November 14 2023

Pickled cabbage or Sauerkraut (almost the same thing), close to my town there's a village that is well-known in the entire country for pickling cabbage, they do it in large quantities for many years. In the past, these types of barrels were used, only made from wood, but nowadays most of them turned to use plastic barrels.

That’s very interesting my friend how exactly does this process work? Are they just letting it naturally ferment or is this a grinder?

Usually, they do it 2 ways, one way is to use the whole cabbage, and after it is pickled the leaves are used to make a traditional food of cabbage rolls filled with meat and rice, the other way is to slice the cabbage before pickling and then eat it as a side dish or prepare other dishes.

The cabbage rolls do you know what they are called, Liz can look for them locally!😀
My neighbor at the tiny house had something similar, but with fermented grape leaves filled with rice!😀

Yes they are almost the same as "dolmas", even here many people use vine leaves, this food comes from the turks/ottomans, except that it got revamped to use a lot of meat in the and especially pork meat.
In romanian they are called "sarmale", but there's no direct translation, search online for "Romanian Cabbage Rolls" and you'll find plenty of variants.

I didn't know they did this and find how certain things are made very interesting. Shame the wooden barrels are disappearing though.

Probably the wooden barrels will make a comeback at some point, people are getting tired of plastics everywhere.

I hope so as plastic just doesn't have the same impact plus I bet it does change the taste with no wood involved. Imagine making wine in plastic barrels ignoring the role the oak barrel plays in the overall taste.

I think the use of oak in the making/storing of wine has dropped a lot as well, now the standard is stainless steel, but for whiskeys...that's not an option.

Sauerkraut is not one of my favorite things, but is tasty on a Reuben sandwich. The produce looks lovely! Nice job with your 7437 @actifit steps for the day. Take care!

I have to be in the mood for a pickle, but I learned with sauerkraut, I absolutely must rinse it first before trying to eat it. My dad never did; it's just too much otherwise.

Rinsing it, its almost always a must before cooking/eating, unless if you're using a fresh new batch where not that much of the salt got into it.

I don't recall my father ever rinsing it! We only had canned or in a glass jar version, and he would just eat it straight from the jar and into his plate! I think that might just do me in, lol!

I might be having a hankering for a Reuben sandwich now, lol! Take care my friend!

It also depends a lot how its made, if less sals is used then it can be eaten as is but it won't last as long.
