A 200yo house being renovated/restored, the roof is entirely new, shingles and all and the interior is ready to be plastered with mud/clay.

Looks amazing and ready to go! Typically, they use mud/clay instead of plaster on the walls? How is that for insulation value?

Most of these houses were built when people didn't have much money and didn't even have access to modern building materials, in the 90s I still remember people doing this to new houses as well. The clay is mixed with straw and/or sawdust and it offers very good insulation, chatgpt says this about clay plaster:
Better moisture regulation and indoor air comfort.
Adds thermal mass, stabilizing indoor temperature swings.
Comparable or slightly better insulation than standard plaster (when well made).
