Most of these houses were built when people didn't have much money and didn't even have access to modern building materials, in the 90s I still remember people doing this to new houses as well. The clay is mixed with straw and/or sawdust and it offers very good insulation, chatgpt says this about clay plaster:
Better moisture regulation and indoor air comfort.
Adds thermal mass, stabilizing indoor temperature swings.
Comparable or slightly better insulation than standard plaster (when well made).
