What's That?!.........My Actifit Report Card: October 4 2023
What’s that?! More on the brown things in a minute. First-work was indeed super busy, but the day actually started out crazy before I even got there! We woke up to the electricity off yet again. The only problem was that I needed to get ready to go to work and needed a shower! Being on a well means no electricity, no water. So @silvertop climbed out of bed to re-set the generator up. Fortunately we have a big enough one to power the well and the hot water heater-just not simultaneously.
I figured out that the clinic was without power as well, so I slipped my phone into its external battery pack so I could use it as a hotspot to verify insurance. Before I got out the door, the power did come back on. This is the 5th outage for October thus far and it’s only the 4th!! 😳
Tonight’s post however, isn’t on all that-instead, I’m going to show you how to make vanilla extract. I got some grade B Madagascar vanilla beans. I cut with a sharp knife, down each bean just to open it up a little. I have in the past cut them into 1/2” segments as well. Either will work. Then I purchase a 5th or two of vodka. You can use rum as well if you want. I had 2 brands.
That one had been sitting in the pantry unopened for about 7 years. This one, I just bought at Costco on Monday.
I then put half in one bottle and the other half in the other.
You need around 10-15 beans depending on their size. I’ve used 10 in the past and for these two batches, I used probably closer to 15+ as the new vanilla beans were much shorter than the older ones I had. Once the beans are in, recap tightly and get a marker to date the label in a couple of places.
Here’s a bottle I started back in 2015. ( made quite a few batches that first go round)
As you can see, it has a lovely amber color. There is no carmel coloring, no water and no sugar added. I use my vanilla in baking but also in the whip cream I make for our espresso drinks. Also, if you like vanilla, you could always drink a shot!
Anyway, I leave mine sit in the pantry generally undisturbed for a few years as I always have some in process at one stage or another. You can also choose to shake it up once or twice a month. I haven’t found that to hasten the process. It too might depend on how dark you want your vanilla to be.

Wow I heard if you take vodka its so strong you gonna have dizziness haha.
Well......I don't really drink, but once, on a very hectic and insane workday, I came home from work and downed a shot of the vanilla vodka! It burned all the way down and shortly thereafter, I was a wee bit dizzy!

Is water heater takes a lot of power from the generator?
It runs on 220V so yes, it's a bit of a power hog. The well is the same type of current, hence the reason you don't run both at the same time.
It's no wonder why genuine vanilla extract is so expensive.
It's much less expensive to make yourself and it really adds to the flavor of baked goods (and whipped cream!).🤗💜
I knew straight away that those are Vanilla, but didn't think about Madagascar, that's a bit far from where you are, I guess they're a bit pricey, right?
Not too awfully bad. I got 26 beans for around $18, but if you add that to the price of the vodka and then think about the cost of your average 2 ounce bottle of real vanilla, I come out way ahead minus the artificial color, added water and sugar! Plus, its a good tasting vanilla. You miss it if you don't put it in whatever your baking.
Thats not too bad $18, I thought they would be way more expensive, YumYum flavour, vanilla icecream is the best :)
Well.....we have a brand made by a company out of Oregon called Tillamook. They make cheeses, butter, ice cream. I personally prefer a chocolate ice cream and they make two I'm fond of. One is called mudslide, which is chocolate ice cream with a ribbon of solid chocolate running through it and the other one is the same chocolate ice cream, but with a ribbon of peanut butter (like in Reeses peanut butter cups) running through it. They do make a very good vanilla bean ice cream though, too. Tillamook is also known for their meat snacks; kind of like jerky but more of a beef stick type thing. Yum on all fronts!
I love chocolate or cocoa ice cream as well, so sometimes just having them both(choco and vanilla) in the same cup is the best solution. :)
