Dandelions! I know-everybody thinks they are an annoying weed and invasive,which they definitely can be, but did you know they are versatile and have many uses? The greens, the younger, the better are used in salads. The flowers are edible and the roots used as a coffee substitute.

Don’t forget wine! My dad actually made dandelion wine one time. If I remember correctly, it didn’t turn out too well!
I did mention that my hubby made dandelion wine. His was good, but it was at his mom's house and when she died, we had to clear everything out. Unfortunately, we poured it all down the drain (there was a lot of it) and the smell from it alone was alcoholic enough, it's a wonder we weren't drunk on it, lol! He's never made any more. Maybe we should try again.

I haven't tried the flowers either. They say in order to avoid the bitterness, you need the young plants. The bigger they are, the more bitter they are.
