GETTING TO COOKING AT THE BOARDING HOUSE AGAIN: LUNCH

It's really been a while since the last time I cook any dish here at our boarding house either for breakfast, lunch or dinner. Usually I cook a lot here, not including rice of course because I always try to cook rice here to save money. I eat a lot. I was advised to eat a lot of calorie dense meals and have high protein intake, as a person who goes to the gym regularly. Thinking of a way to save money and still being able to atleast reach the minimum protien intake per day, I buy 1 tray of egg every 4 days. To prevent from being sick of eating egg easily I change the way I cook my eggs. For example today I'm cooking my boiled, I'll be cooking the eggs differently the following day like cooking it scrambled, and the day after that I'll be cooking if sunny side up. I even mix and match different seasons just to change the flavor profile of the egg, thinking of it now, it was really hilarious. It's not just eggs that I cook, I also make soup and fries chicken breasts. For today, I'll be cooking fried rice of my own version. I already decided that I'll cook fried rice for lunch yesterday and cooked rice last night, they say that one day old cooked rice is the best for fried rice.

BUYING THE INGREDIENTS

I woke up a bit late, it was already 10 in the morning and was almost 11. I thought about it fora bit if I would still cook fried rice for lunch because it was almost time for lunch. Saying to my self the some fried rice would be nice for today and I already have the rice cooked last night, there's no reason to cancel the plan of having a nice meal. So I got out of bed and directly took a bath so I can go to the market and buy the ingredients for my fried rice. The market is only 2 blocks away from the boarding house that I'm currently in, and you can find various fruits, fresh vegetables, fish and different kinds of meat.

I chose to buy chicken breast because it has a lot of meat and I couldn't think if any other cuts that would fit in the dish other than breast part. I bought the bone-in because it's much cheaper and I mean, it's not really that difficult to remove the bones though. After buying the chicken, I proceeded to look for the other ingredients.

It didn't really took a lot of time trying to find the other ingredients I need in the fried rice, there were a lot of stalls in the market that sold what I needed. In the picture above, you can see all the ingredients that I am using in my fried rice. Of course without including the rice, I didn't buy that in the market today, so it's kindda out of the group photo. As you can see I bought some tomatoes, garlic cloves, onion, carrots, onion leaves/ scallion, cooking oil, soy sauce, paprika, chilli powder, magic sarap (a type of seasoning with msg) and oyster sauce.

PREPARING THE INGREDIENTS

In the preparation of the ingredients, like the vegetables and chicken, I started with washing all of them with water. After washing them, I proceeded with the chicken first.

I deboned the chicken and sliced it into small cubes. After slicing, I put the bone and skin in the trash bag. I did not include the chicken breast because I was afraid that it's gonna be too chewy or something.

The next thing I did after finishing up with the chicken breast is copping the rest of the veggies. You can see that the onion was cut into strips, the garlic being minced, the carrots and was diced and the scallions was cut diagonally, I don't know why it look aesthetic to me.

COOKING TIME

Here is my portable butane gas stove, where I'm gonna cook the fried rice. This butane stove has been with me for about 3 years now, I brought this here with me when I started to attend face to face classes in college and had to live in a boarding house. Everytime I cook, I use this. The owner don't allow rice cookers here, it's because it may cause increase in the electric bill. But monthly rate here is fair , with free electricity and water it's kind of a good deal, and the landlord treats us well. So back to the cooking part...

There's a lot of arguments regarding which to saute first when cooking fried rice, but to avoid those arguments I sauteed it both at the same time. For me it doesn't really matter because when you put both at the same time na temperature of the cooking oil will drop and the garlic will no burn as the onion caramelize. After sauteing the garlic and onions, I put the chicken, then added a bit of oyster sauce and stirred until it's time to add the carrots and tomatoes. The carrots took awhile to soften, when it soften a bit that I can start to cut it with a spoon I put the scallions in and steered well, and covered it.

After covering it for a bit, it's time to season. I added the magic sarap seasoning, paprika, chilli powder and black pepper and a bit of sow sauce. And I stirred it again before adding the rice.

STIR.. STIR... STIR...

As I was mixing the rice, I gradually added soy sauce to taste. I repeated this process, adding soy sauce little by little untill I'm satisfied with the taste.

Of course, after I've finished cooking the fried rice, I thoroughly clean the kitchen counter and my butane stove, put all of the peels in the trash bag and cleaned the sink. It's a no brainier that you do that...

TIME TO EAT

Finally after all the efforts, I can sit down and enjoy the meal. Which shot do you think looks better?

This one or...

this one??

This one for sure is the best shot, it has coke on it. Come on!

I really did enjoy this meal, I maybe ate half of the whole pan. I was so full that I took a nap afterwards. Eating the food your craving and getting a good nap afterward feel so rewarding.

AFTERNOON/ EVENING THINGS

The skies are pretty ain't it? I took this shot after walking up from my nap. I was a bit surprised that it was only 6 pm in the evening yet I can hear little to no noice coming outside. Normally it's very noisy because of the cars, motorcycles and truck pacing by the road, and for three years I've been staying here, I kindda got used to it.

GYM GYM GYM

If you have read one myblog or my actifit report card before, I always put my best in staying consistent in gong to the gym. Consistency is key, but consistency is just a product of discipline. I could lose a year's worth of gains from sweat and hard work in staying consistent by not going to the gym for a week. Even if I eat a lot, I don't get fat because of my high metabolism. Some may gain weight if they stop going to the gym for a week, but it's different for me because I lose weight. So tonight I hit some shoulders and legs workout, I will not go deep too much into the details. I did sa military press for the front delt, lateral raises for the side delt, seated rear delt flies for the rear deltoids, and conventional squats and hack squats for the legs.

Hopefully I'll be back tomorrow.

That is all for today's actifit daily miniblog. If you ever made it this far in the blog, I hope it meant that you liked and enjoyed reading through it. Yet another lengthy miniblog, I'm kind of liking writing more daily. So if you find my daily miniblog interesting and you want to read more of my future blog, you can show support by giving me a follow and I'll be sure to follow back. I hope to see you again in my next blog/miniblog, and thank you for the time, it's much appreciated!
