One Knight Away to a Five Miler - My Actifit Report Card: October 16 2021


As Saturday night winds down, Tiffany and I are already laid out at a hotel; 15 minutes away from tomorrow’s running event:

The race takes you on a tour around the University of Central Florida campus.

This is the 3rd race of the Track Shack Running Series. Tiffany and I ran the first one and this will be our second in the series.

If you know, Track Shack manages tons of running events and many that have been around for year and although the U Can Finish series is relatively new, the fact that it’s UCF sponsored adds to the excitement.

Tiffany and I decided to just do the 5 Miler and not do both the Five and Two. We just participated in a half marathon recently. Went to keep the next few runs simpler.

Today, mobility was minimal; although Tiffa and I held true to our Saturday Cheat Days and grocery shopping.

I did put in a few hours for my employers, but I work remote and I stayed pretty much at the desktop.

We took the day off from our usual Orangetheory Fitness HIIT workout, which for a Saturday is unusual; but wanted to be prepared for the run tomorrow.

We had lunch at one of my favorite spots, when I want my Latin Cuisine fix. I’m Dominican and Puerto Rican while Tiffany is not, so although she will try to make some of my favorite dishes; I need to have the authentic stuff.

Tu Casa takes care of that for me:

That is Pollo Guisado (Chicken Stew) with white rice, beans and sweet plantains (Maduros)

Tiffany, had their Lasagna with Maduros and a side of an Avocado Salad.

For dinner our foodie excursion took us to a Vietnamese spot called Viet Nom.

We started off with the Crispy Tofu Bites:

Very Tasty.

Tiffany went with the Rice Bowl with Chicken:

I went with the Pho - I will always go with the Pho, Chicken as well with Crispy Tofu Bites in the Pho as well:

So needless to say, we are excited for tomorrow and the weather looks like it’s going to cooperate.
