• Where has the rapid development of the 21st century brought us? Inventions and discoveries are endless. Mankind has found many easy shortcuts to make life easier. Along with other senses, our taste buds are also getting familiar with new flavors. Our tongue has become familiar with the taste of chocolate, coffee, new drinks and sweets. If this wind of westernization has given us many things, it has also deprived us of many beautiful things.
  Jaggery, which was once used in over 20 foods and was also useful as a natural industry, is now very limited in its use. Sugarcane juice used to be used as a drink and as a food with bread. was also used. The same juice was passed through indigenous industries to form molasses. Jaggery sweet was used in old time sweets like batashe, riuriyan, tangri and ladoo. It was the virtue of jaggery that these native sweets were beneficial instead of harmful. Jaggery halwa was very popular in Central Punjab and Khyber Pakhtunkhwa.
  Molasses was mostly used in tea. It should be remembered that before the discovery of white sugar half a century ago, molasses, sugar and native sugar were the only sources of sweets. But mostly jaggery was used in tea. Tea made from jaggery used to be thicker and slightly stronger in color than tea made from white sugar. During this period, tea was drunk in bowls made of clay instead of sugar and glass cups and bowls. This is the reason why people used to drink many cups of tea at a time.
  As a child, I often had the opportunity to drink molasses tea when we used to go outside the village to the zamindars' camps, and they treated us with molasses tea in winter and salted lassi in summer. Across the yellow fields laden with mustard, the taste of this tea with molasses still lingers on the tip of one's tongue at the foothills of the mud huts and huts. When we started coming back, those sincere people would also put sugarcane straw inside the ghee tamales, which we used to eat with bread for many days.

• Even today, whenever I want to repeat the past, I bring jaggery halwa from near the railway station and make jaggery tea at home. But this tea only makes one cup because everyone except me likes white and artificial sugar tea. I have to drink molasses tea in sugar bowls because clay pots are now a thing of the past.
