When someone chokes you, he will not just touch your throat, he will put pressure. It is painful and you might find it hard to breathe.
First of all, you should make sure that you can breathe. To do that, you can drop your chin as soon as someone just grabs your throat. And tighten your neck. Now you can still breathe.
To defend against choke, you can grab the attacker's thumbs with your index fingers and thumbs, and pull it outside. Then you can strike you right away. You should leave the place as soon as you can.
