My Actifit Report Card: September 27 2020

Big day ahead with a luncheon party at home to celebrate my wife's birthday (and our 9th wedding anniversary). My part was as chief chef.

Had some big ideas for 4 main courses, plus two entrees plus a dessert. That took some thinking through. So much so I wrote down what was needed

Turned that into a run sheet with timings.

Took a while to get going. Prep started at 9am - made fruit salad first as I do that every day for breakfast. My mother always served a fruit salad for Sunday lunch. This one made in her memory - she will be laid to rest September 30

Knocked off preparation for a favourite - tod mun pla - Thai Fish Cakes - I did forget one ingredient. Recipe calls for kaffir lime leaves. I use Vietnamese mint. Forgot.

First main is whole grilled snapper with onion and ginger. Paste made of green peppercorns and chilli - rub on and grill 8 minutes a side. Serve with a fry up of onion, garlic and ginger and a little sugar

Two roast meats - pork leg done on charcoal bbq = set and forget. Beef eye fillet done Philadelphia style. Did that on gas bbq

Last main was Chicken Basque using Delia Smith recipe - a bit of work to get started and then set and forget. Worked perfectly though I left out some bits too.

That gave me time to wrap up and serve entrees - fry Thai fish cakes and steam prawn hargows.

Mains looked great though I did over cook the roasts a bit. Everyone was happy. Ladies provided all the salads.

Dessert supplemented with a wicked orange almond cake my wife made and a few other goodies. Lovely party but my knees took a beating from 7 hours solid standing.

When guest left my wife and I sat around the fire pit and enjoyed a cheese board and some bush TV. Next time will be a simpler affair.
